Weekly Menu Plan #38

I love menu planning and seeing other's dinner plans! I'm weird like that ;) As I've shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author's original recipe unless it's my own recipe/creation that I don't have a link for... yet.

Sunday: Burgers - Nothing fancy, just classic cheeseburgers with fries and carrot sticks for a side. I'm all about easy-peasy on a Sunday. 

Monday: Chicken Alfredo BundlesWe've tried a different version of these made with cream of chicken soup and cheddar cheese so I think the Alfredo version will be tasty as well. A side of steamed broccoli will be a perfect accompaniment. 

Tuesday: One Pot Pizza Pasta - We are big pizza fans around here and making it into a pasta dish that only gets one pot dirty? Amazing! I can't wait to eat this. 

Wednesday: Sloppy Joes - I love freezer meals! The last time I made sloppy joes I made extra so I could throw some in the freezer for future use. All I need to do for dinner is put it in the crock pot with a little extra water and it will be ready just when we need it. Hallelujah! 

Thursday: Leftovers

Friday: Homemade Pizza and Movie Night - you can find my pizza crust recipe here.

Saturday: Shepherd's Pie Is there a meal that screams comfort food more than shepherd's pie? A delicious stew topped with creamy mashed potatoes and then baked is begging to be eaten! We usually make ours with ground beef because it's what we have on hand.

Sunday: Sloppy Joes & corn on the cob - We have yet to buy corn this season and knowing how much the kids LOVE it this just felt wrong. I'm looking forward to this summery meal with watermelon on the side!

Monday: Honey Mustard Chicken with rice - This is one of those meals that I've thought about posting the recipe for because we LOVE it but it's not the prettiest meal to photograph. It's basically beige with more beige. Diced chicken is mixed with honey, brown mustard, cream of chicken soup (I use this recipe) and some mayo to create a super creamy sauce. We pour it over brown rice and usually serve it with broccoli. I'm out of broccoli so side salad or steamed green beans it is!

Tuesday: Brown Sugar Chicken Sandwiches - I was going to make Brown Sugar Ham Sandwiches but there was a demo of Hillshire Farm Chicken at Sam's and we really liked it. It was a better deal than the ham as well so we swapped it out and are going to try it instead! 

Wednesday: Chicken Ranch Tacos - Would it be a normal week if we didn't have a taco/burrito/enchilada/taquito style item on the menu? Probably not. The ranch seasoning adds a little something extra to the normal taco flavor that is something special. I love making our own ranch seasoning mix (cheaper and healthier!) instead of buying the little packets and I'll be sharing our favorite homemade taco seasoning this week as well so you can make this meal with us!

Thursday: Leftovers

Friday: Out with family for my parents 35th wedding anniversary! It's been a while since my family was all together so this will be a fun night!

Saturday: Grilling! I'm not sure what yet but we will be with family so I'm sure there will be plenty going on. If you need some ideas to go with your summer grill plans you can visit this post where I share ten easy summer sides to throw together for your summer gatherings!

Sunday: Brats & Hot Dogs - Jamison has been begging for hot dogs so I've been trying to find a time when it will work to get the grill out. Unfortunately the weather has been ALL OVER THE PLACE and trying to plan anything is impossible unless it's the day of... and even that can be iffy! Hopefully it stays nice enough to grill today!

Monday: Sticky Finger Chicken Wraps - I've posted about these before and we eat them frequently because they are just that good! I got my mom hooked on the sauce the last time they were here when we used it as a dip for tempura shrimp. It's so yummy!

Tuesday: Sloppy Joes - ground beef, tomato sauce/soup, seasonings, bam- done. Sorry I'm not more helpful, haha!

Wednesday: Leftovers - Wait, what? Yes, leftovers on a Wednesday but for a good reason!

Thursday: Spicy Shredded Pork for tacos/burritos/buritto bowls - Happy Cinco de Mayo! While there isn't any Mexican in our blood we can definitely appreciate the food! I'm sure this recipe is nothing like real carnitas but it is darn good and served with cilantro lime rice (with our own cilantro that we grew!), black beans, avocado, salsa, and whatever other toppings I come up with it's going to be AMAZING! 

Friday: Homemade Pizza

Saturday: Honey Sesame Chicken - This is another of our favorite "at home take out" dishes to make. I think this is Parker's favorite. I can eat any and all of them. Over and over. Nom nom nom.
