Weekly Menu Plan #59

Spring has officially shown up! Our grill is out and we are eating fun meals. The kids are outside nearly every day on their bikes and coloring with chalk. I've got a few super fast meals on the menu this week as well as a couple that I can prep ahead and cook when it's time. It might even get warm enough this week for picnics... as long as the wind isn't terribly crazy. Yay for spring!

Weekly Menu Plan #23

I love menu planning and seeing other's dinner plans! I'm weird like that ;) As I've shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author's original recipe unless it's my own recipe/creation that I don't have a link for... yet.

Sunday: Pulled Pork sandwiches - It's a cook out with extended family. A good portion of my side of the family hasn't seen us in about a year! That means the last time they saw the little guys they were barely crawling let alone running around the yard. We are going picnic crazy with pasta salad, potato salad, fruit, and cupcakes. Yum!

Monday: Honey Chipotle Chicken Crispers (Chili's Copycat Recipe) - We used the recipe for these chicken crispers a few weeks ago when we made Sticky Fingers Wraps. The breading is light and crispy while the chicken stays incredibly juicy. 

Tuesday: Burgers - I'm thinking of doing some gourmet style burgers topped with grilled pineapple or fried eggs. 

Wednesday: Pizza Quesadillas - We like to call these "Pizzadillas." These are a huge hit with the kids and they are perfect for letting them help in the kitchen. Sprinkle on a light layer of cheese on the tortilla, add your toppings, another sprinkle of cheese, and a second tortilla. Grill each side until toasted and the cheese is gooey. Serve it with a side of warm pizza sauce!

Friday: Homemade Pizza and Movie Night

Saturday: Cuban Sandwiches - Micah discovered he LOVES Cubans a year or so ago and it's almost always what he orders when we go out. I realized that we have amazing pulled pork left from the Father's Day meal at our church so we are going to make our own Cubans at home!

Sunday: Sandwich Rolls - I haven't made these before but the sauce is very similar to the brown sugar rolls I put on our menu a few weeks ago so I think they will be fabulous!

Monday: Taco Salads - We need something quick and easy for dinner since we have a Track and Field night for the big boys to celebrate the end of the school year. Yay!

Tuesday: Breakfast Pizza - I know I've put this on the menu before and I can't wait to shove it in my face again. I mean eat it nicely like a lady... yeah, that's it. 

Wednesday: Lo Mein - As of right now my plan is to just do my usual throw it together using whatever I have on hand but if I get motivated it might turn into Chicken and Broccoli instead. But that is probably stretching it. I'm much better at winging things, especially Lo Mein. 

Thursday: Leftovers - Well, everyone else gets leftovers. I get to go out to eat with my MOPS ladies to celebrate another successful year!

Friday: Homemade Pizza & Movie Night

Saturday: Burgers - I've really been wanting a super juicy burger for quite some time. We went out to a burger place last weekend and while it was good, it wasn't great. I want a really great burger! Here's to hoping we can get it right at home!

Sunday: Sandwiches and chips - This seems like a really lame meal for Mother's Day but we had a giant platter of sushi for lunch so we probably won't have much of an appetite. But we also got several kinds of lunch meat and cheese, lots of veggies and spreads, and various kinds of chips so it's not like its a totally boring meal. And homemade brownie/coffee ice cream sundaes for dessert. Yum!

Monday: Waffles of Insane Greatness - Here they are again! Parker requested them so on to the menu they went. 

Tuesday: Enchilada Pasta - I love how easily this dinner comes together. This time it will be a meatless version but I'll load it up with black beans, chili beans, and corn. 

Wednesday: Crock Pot Steak Bites - This will be a new recipe for us. We bought some meat from my parents when they bought half a cow so our freezer is stocked with various cuts of beef. This sounded like a super yummy way to use up a round steak! I'm thinking mashed potatoes and steamed broccoli on the side sound great as well. 

Thursday: Leftovers

Friday: My family will be in town to celebrate my little brother's college graduation so I'm not sure what is on the menu yet!

Sunday: Honey Mustard Chicken This is a recipe I learned from a friend and we've been making it for probably six or seven years with a few random tweaks. I think I need to make a post about it at some point though because it's sooo yummy and pretty darn easy as well!

Monday: BBQ Chicken Sandwiches I've got just enough of the BBQ chicken from last week leftover to throw it on some pretzel buns and a side salad... on the side ;)

Tuesday: Ham Sliders Jamison has been begging for me to put these back on the menu. I make two pans of them for our family - one with cheddar and one with provolone. 

Wednesday: Grilled Cheese and Tomato Rice Soup

Thursday: Leftovers

Friday: Homemade Pizza

Saturday: Potato Cheese Soup I use a recipe that Micah's mom passed to me. Occasionally I add in some broccoli or diced ham to change it up but I think this week I'll make some bread bowls to serve it in.
