Weekly Menu Plan #31

I love menu planning and seeing other's dinner plans! I'm weird like that ;) As I've shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author's original recipe unless it's my own recipe/creation that I don't have a link for... yet.

Sunday: BBQ Chicken Pizza - This is a request from Jamison and I was happy to add it to our menu this week! 

Monday: Lo Mein - It's been a couple weeks since we've had stir fry and we are still getting fresh veggies from our church's community garden so this is a great way to use them up! 

Tuesday: Homemade Salad Bar - I've got loads of different salad toppings so everyone can create a salad that they will love. I'm amazed at how much Anders loves salad! What not even two year old gobbles up lettuce but leaves muffins on his plate? 

Wednesday: Nachos - This was a HUGE hit with the kids the last time we made them so I knew they'd be excited to see it on the menu again. And really, chips with cheese, refried beans, guac, sour cream, and salsa could be my dinner every night and I'd be totally cool with it. Yeah, totally cool. Who needs real food?

Thursday: Leftovers

Friday: Homemade Pizza and Movie Night - you can find my pizza crust recipe here.

Saturday: Enchilada PastaThis is usually a weeknight meal because it's so easy to throw together but because of Micah's work schedule anything made on a weeknight he has to reheat no matter what. Occasionally I like to make these meals on a weekend so he can try them fresh and not as leftovers!

Sunday: Bacon Cheeseburgers - Is there anything that really needs to be said here? Bacon, good. Cheese, good. Burgers, good. All the fixings plus french fries on the side. Perfection. 

Monday: Rice & Bean Enchiladas - This is a great frugal meal! No meat and items you may even have in your pantry or freezer. I like cooking huge batches of black beans and enchilada sauce then freezing them in 8oz portions so I'm ready for meals like this. 

Tuesday: Buffalo Chicken Taquitos - I posted about making these ages ago and they were sooo yummy! I've been thinking about them a lot recently so on to the menu they went! 

Wednesday: Taco Egg Rolls - What a surprise, another Mexican inspired dish! We didn't have any last week so it's a two-fer this week. This will be a new recipe for us but what's not to like? All the taco fixins stuffed inside an egg roll wrapper, cooked, and then dunked in guac and salsa? Yes please!

Friday: Homemade Pizza & Movie Night

Saturday: Honey Mustard Chicken Avocado Bacon Salad - Yeah, it's a mouthful. But go check out the pictures. It's BEAUTIFUL and making me so hungry even though I just ate lunch. We won't be adding the onion but the rest is amazingly scrumptious. Nom, nom, nom.

Sunday: Crock Pot Ham with Mashed Potatoes - Some friends and I were discussing ways to use up leftover ham and after the amazing suggestions I knew I just had to have ham on the menu. I can't wait for all the ham leftovers!

Monday: Chef Salad - With the temps rising I want to make sure I'm making some meals easy on the air conditioner. It works overtime when I'm cooking! 

Tuesday: Black Bean and Rice Enchiladas - I haven't made these in quite a while but I just made a huge batch of black beans for the freezer so it only makes sense to add enchiladas to the menu! I love making homemade enchilada sauce as well because it's so easy and incredibly cheap. 

Wednesday: Eggs Benedict Casserole - Yay for ham leftovers! I'm actually planning on using ham for breakfast meals this week too (ham gravy & biscuits, anyone?) but we love this casserole and it makes a great dinner. Plus I haven't learned how to poach an egg yet (one of those silly cooking skills that still intimidates me for some strange reason) so this is an easy way to get the flavors of eggs benedict without needing to learn that skill or stand at the stove poaching a gazillion eggs.

Friday: Homemade Pizza & Movie

Saturday: Sticky Finger Chicken Wraps - One of our favorites! If you've been around for any time at all you know we eat this about once a month. The jar of sticky sauce has been staring at me from the fridge so I'm answering it's call to be consumed!

Sunday: Sandwich Rolls - I haven't made these before but the sauce is very similar to the brown sugar rolls I put on our menu a few weeks ago so I think they will be fabulous!

Monday: Taco Salads - We need something quick and easy for dinner since we have a Track and Field night for the big boys to celebrate the end of the school year. Yay!

Tuesday: Breakfast Pizza - I know I've put this on the menu before and I can't wait to shove it in my face again. I mean eat it nicely like a lady... yeah, that's it. 

Wednesday: Lo Mein - As of right now my plan is to just do my usual throw it together using whatever I have on hand but if I get motivated it might turn into Chicken and Broccoli instead. But that is probably stretching it. I'm much better at winging things, especially Lo Mein. 

Thursday: Leftovers - Well, everyone else gets leftovers. I get to go out to eat with my MOPS ladies to celebrate another successful year!

Friday: Homemade Pizza & Movie Night

Saturday: Burgers - I've really been wanting a super juicy burger for quite some time. We went out to a burger place last weekend and while it was good, it wasn't great. I want a really great burger! Here's to hoping we can get it right at home!
