What a fun and weird week! Having a holiday in the middle really throws off the normal groove. Micah was home for the 4th which allowed us to have a really fun day with the kids. We took them to Despicable Me 3 at the theater then out to lunch for pizza. And of course fireworks that night! I was off my game on Wednesday though because of the day off. I love menu planning and seeing other's dinner plans! I'm weird like that ;) As I've shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author's original recipe unless it's my own recipe/creation that I don't have a link for... yet.
Sunday: Lo Mein & Pot Stickers - We haven't had either of these in a while but especially the pot stickers. If you've never made your own before I HIGHLY recommend it! They are a little tedious but so worth the effort. Plus this recipe makes a big batch so you can freeze them so you are ready when the craving strikes again!
Monday: Brats & Hot Dogs - Happy 4th of July! It wouldn't be the 4th without grilling, right? I've also got ingredients for pasta salad, potato salad, and ice cream sundaes.
Tuesday: Breakfast Pizza - Homemade pizza crust topped with enchilada sauce, scrambled eggs, breakfast sausage, black beans, and corn. A healthy layer of cheese brings it all together and then we top it with sour cream, avocado slices, and salsa.
Wednesday: Chicken Bacon Ranch Pasta - This isn't really a summery meal but I've got all the ingredients and sometimes it's more important to cook from the freezer/fridge/pantry! But this is a super creamy and delicious meal. I'm going to serve it with some steamed broccoli and possibly homemade breadsticks. Because carbs.
Friday: Homemade Pizza & Movie Night
Saturday: Grilled Cheese (for the kids) & DATE NIGHT for Micah and me! One of my goals this month was to go on a date with Micah but we are doing an at home date since finding a sitter won't work this month. We are picking up food, spreading out a blanket, and having an indoor picnic! Intentional time is what matters, no matter where it is :)
Summer is in full swing and potlucks, picnics, and family gatherings abound! But what should you bring? Do you pick up a bag of chips or tray of cookies on your way or do you throw together something at home? I usually make something unless I'm super crazy low on time but I keep staples in the house that allow me to whip up a side dish or dessert on the fly.
But these dishes have me thinking that I may need to change my staples up a bit! These dishes all look so fresh and filled with the flavors of summer that I really want a buffet filled with just these foods! I know Micah is gagging at the thought of most of these dishes (he is NOT on board with peppers, onions, or chunks of tomatoes) but he doesn't need to eat them - more for me!
