Creative building, Instant Pot fun, and crepes - 5 places I found joy in the chaos this week

I love being able to look back at a week with happy thoughts. Was everything perfect? Of course not! But we enjoyed our time together, we accomplished some things, the kids mostly got along, and overall it was just GOOD. This is why I continue to do these posts. To prove that amidst all the crazy that comes with everyday life that there is so much good shining through.

Weekly Menu Plan #36

I love menu planning and seeing other's dinner plans! I'm weird like that ;) As I've shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author's original recipe unless it's my own recipe/creation that I don't have a link for... yet.

If you need some inspiration for how to create menu plans you can read here where I go into detail about how I make a plan for our food week and here to read how I create our grocery list.

We've got TWO birthdays this week! Anders' birthday is on Monday and Cade's birthday is on Tuesday. Wait- twins born on different days? Yes! It happens more often than you think although I've yet to actually find statistics on it. Anders was born at 9:59pm and Cade at 12:10am. Only two hours and eleven minutes apart but two different days. It will make celebrating them as they get older a little easier because there's no fighting over who gets to pick the meal/dessert/etc for one day - they each have their own!

Sunday: Mini Pizzas - I've got mini pizza crusts in the freezer from one of my last freezer cooking sessions ready to go. Everyone will get to top their own pizzas so I've got a variety to please everyone. This is a great quick meal for busy nights when everything is chopped and ready.

Monday: Lo Mein - I picked up lots of veggies from Aldi on our way back home from vacation and this is always my favorite way to use a bunch of them up. It's also Anders' birthday today and he loves noodles!

Tuesday: Bean & Cheese Taquitos - These were a HUGE hit when I made them a couple weeks ago so I added them back to the menu for Cade's birthday.

Wednesday: Honey Crunch Pork ChopsI've had these on my mind for a few weeks and I finally got the chance to put them on the menu. I'll be serving them with mashed potatoes and steamed green beans. I can't wait!

Thursday: Leftovers

Friday: Dinner @ Church - Our church is hosting a Harvest Party tonight with a free meal, carnival games, and costume contest. It's a fun time for everyone and a chance to let the kids run around in their costumes an extra time. And bonus that it's inside so no need to layer underneath the costumes to stay warm!

Saturday: Homemade Pizza and Movie Nightyou can find my pizza crust recipe here.

What's on your menu this week? Any awesome recipes to share with me?

Weekly Menu Plan #31

I love menu planning and seeing other's dinner plans! I'm weird like that ;) As I've shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author's original recipe unless it's my own recipe/creation that I don't have a link for... yet.

Sunday: BBQ Chicken Pizza - This is a request from Jamison and I was happy to add it to our menu this week!

Monday: Lo Mein - It's been a couple weeks since we've had stir fry and we are still getting fresh veggies from our church's community garden so this is a great way to use them up!

Tuesday: Homemade Salad Bar - I've got loads of different salad toppings so everyone can create a salad that they will love. I'm amazed at how much Anders loves salad! What not even two year old gobbles up lettuce but leaves muffins on his plate?

Wednesday: Nachos - This was a HUGE hit with the kids the last time we made them so I knew they'd be excited to see it on the menu again. And really, chips with cheese, refried beans, guac, sour cream, and salsa could be my dinner every night and I'd be totally cool with it. Yeah, totally cool. Who needs real food?

Thursday: Leftovers

Friday: Homemade Pizza and Movie Night - you can find my pizza crust recipe here.

Saturday: Enchilada PastaThis is usually a weeknight meal because it's so easy to throw together but because of Micah's work schedule anything made on a weeknight he has to reheat no matter what. Occasionally I like to make these meals on a weekend so he can try them fresh and not as leftovers!

What's on your menu this week? Do you have any meals that the kids rave about so you make to see the joy on their faces?
