I love menu planning and seeing other's dinner plans! I'm weird like that ;) As I've shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author's original recipe unless it's my own recipe/creation that I don't have a link for... yet.

If you need some inspiration for how to create menu plans you can read here where I go into detail about how I make a plan for our food week and here to read how I create our grocery list.

I don't make specific plans for breakfast and lunch but these are the basics I rotate between while throwing in a few other things for special days or weeks when I have the right ingredients.

Breakfasts: Pancakes, Coffee Cake, Egg Sandwiches, Sausage Balls, Eggs (various ways), English Muffins, Banana Bread, Biscuits and Gravy, and various types of muffins.

Lunches: Leftovers, PB&J, Meat and Cheese Wraps, Cheese Quesadillas, and Mac 'n' Cheese.

Dinners, however, are always planned for since they tend to take the most ingredients and prep time. Here's what's on our menu this week:

Sunday: Waffles of Insane GreatnessI'm going for super easy, no brainer meals this week because of the holiday. I know these will get eaten and there will probably be leftovers for an easy breakfast. 

Monday: Nacho Grilled Cheese SandwichesUm, holy cow! These sound absolutely incredible! Load up your bread with all sorts of nacho fixins and turn it into a grilled cheese? Genius, just genius. 

Tuesday: Lo MeinI wanted to stay away from anything relating to Thanksgiving food flavors so we are going with Asian flavors! This will be a great way to use up any produce we have that won't be used for Thanksgiving. 

Wednesday: Leftovers - We need to clean out the fridge before we make more leftovers tomorrow! 

Thursday: Happy Thanksgiving! I'm so thankful for each and every one of you that supports me and this blog! I pray that you enjoy your time today whether you are with family, friends, or strangers. 

Friday: Homemade Pizza and Movie Night - you can find my pizza crust recipe here.

Saturday: Thanksgiving Leftovers - I'm pretty sure that this is the plan for most people for several days following the holiday. Is it your favorite part?

Sunday: Pulled Pork sandwiches - It's a cook out with extended family. A good portion of my side of the family hasn't seen us in about a year! That means the last time they saw the little guys they were barely crawling let alone running around the yard. We are going picnic crazy with pasta salad, potato salad, fruit, and cupcakes. Yum!

Monday: Honey Chipotle Chicken Crispers (Chili's Copycat Recipe) - We used the recipe for these chicken crispers a few weeks ago when we made Sticky Fingers Wraps. The breading is light and crispy while the chicken stays incredibly juicy. 

Tuesday: Burgers - I'm thinking of doing some gourmet style burgers topped with grilled pineapple or fried eggs. 

Wednesday: Pizza Quesadillas - We like to call these "Pizzadillas." These are a huge hit with the kids and they are perfect for letting them help in the kitchen. Sprinkle on a light layer of cheese on the tortilla, add your toppings, another sprinkle of cheese, and a second tortilla. Grill each side until toasted and the cheese is gooey. Serve it with a side of warm pizza sauce!

Friday: Homemade Pizza and Movie Night

Saturday: Cuban Sandwiches - Micah discovered he LOVES Cubans a year or so ago and it's almost always what he orders when we go out. I realized that we have amazing pulled pork left from the Father's Day meal at our church so we are going to make our own Cubans at home!

Sunday: Sloppy Joes & corn on the cob - We have yet to buy corn this season and knowing how much the kids LOVE it this just felt wrong. I'm looking forward to this summery meal with watermelon on the side!

Monday: Honey Mustard Chicken with rice - This is one of those meals that I've thought about posting the recipe for because we LOVE it but it's not the prettiest meal to photograph. It's basically beige with more beige. Diced chicken is mixed with honey, brown mustard, cream of chicken soup (I use this recipe) and some mayo to create a super creamy sauce. We pour it over brown rice and usually serve it with broccoli. I'm out of broccoli so side salad or steamed green beans it is!

Tuesday: Brown Sugar Chicken Sandwiches - I was going to make Brown Sugar Ham Sandwiches but there was a demo of Hillshire Farm Chicken at Sam's and we really liked it. It was a better deal than the ham as well so we swapped it out and are going to try it instead! 

Wednesday: Chicken Ranch Tacos - Would it be a normal week if we didn't have a taco/burrito/enchilada/taquito style item on the menu? Probably not. The ranch seasoning adds a little something extra to the normal taco flavor that is something special. I love making our own ranch seasoning mix (cheaper and healthier!) instead of buying the little packets and I'll be sharing our favorite homemade taco seasoning this week as well so you can make this meal with us!

Thursday: Leftovers

Friday: Out with family for my parents 35th wedding anniversary! It's been a while since my family was all together so this will be a fun night!

Saturday: Grilling! I'm not sure what yet but we will be with family so I'm sure there will be plenty going on. If you need some ideas to go with your summer grill plans you can visit this post where I share ten easy summer sides to throw together for your summer gatherings!

Sunday: Bacon Cheeseburgers - Is there anything that really needs to be said here? Bacon, good. Cheese, good. Burgers, good. All the fixings plus french fries on the side. Perfection. 

Monday: Rice & Bean Enchiladas - This is a great frugal meal! No meat and items you may even have in your pantry or freezer. I like cooking huge batches of black beans and enchilada sauce then freezing them in 8oz portions so I'm ready for meals like this. 

Tuesday: Buffalo Chicken Taquitos - I posted about making these ages ago and they were sooo yummy! I've been thinking about them a lot recently so on to the menu they went! 

Wednesday: Taco Egg Rolls - What a surprise, another Mexican inspired dish! We didn't have any last week so it's a two-fer this week. This will be a new recipe for us but what's not to like? All the taco fixins stuffed inside an egg roll wrapper, cooked, and then dunked in guac and salsa? Yes please!

Friday: Homemade Pizza & Movie Night

Saturday: Honey Mustard Chicken Avocado Bacon Salad - Yeah, it's a mouthful. But go check out the pictures. It's BEAUTIFUL and making me so hungry even though I just ate lunch. We won't be adding the onion but the rest is amazingly scrumptious. Nom, nom, nom.

Sunday: Smoked pork loin, various sides and salads, and desserts - We are celebrating Micah's grandparents 65th wedding anniversary today! Yay!

Monday: Mini Pizza - I've got a bunch of small pizza crusts in the freezer do we are going to each create our own pizzas! 

Tuesday: BBQ Chicken Quesadillas - More freezer cooking meals! We froze a container of shredded BBQ chicken several weeks ago for an easy meal and here it is. 

Wednesday: Pork Canitas Burritos - I can't get this amazing meat out of my head so it's on the menu again. Homemade refried beans, cilantro lime rice, and grilled mushrooms to stuff in with all the typical burrito fixing as well.

Friday: Homemade Pizza & Movie Night

Saturday: Crockpot Stroganoff - I use a recipe Micah's mom gave me. It's rich and creamy but oh, so simple!
