Weekly Menu Plan #61 + a peek at our weekly grocery shopping

We are on the high end of our budget this week but since we stayed under last week it balances out. LOTS of produce this week for easy and healthy snacking plus a few staples (chicken, ranch dressing, mayo) that we were out of and a little indulgence in our Sam's Club cart. 

We try to stick between $80-90 each week for our family of seven. A lot of times what is on the menu doesn't directly correlate to what we buy because I like to plan our meals from what we have on hand currently and use our budget to stock up on good buys plus produce and dairy products.

I love menu planning and seeing other's dinner plans! I'm weird like that ;) As I've shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author's original recipe unless it's my own recipe/creation that I don't have a link for... yet.

I don't make specific plans for breakfast and lunch but these are the basics I rotate between while throwing in a few other things for special days or weeks when I have the right ingredients. 

Breakfasts: Pancakes, Coffee Cake, Egg Sandwiches, Sausage Balls, Eggs (various ways), English Muffins, Banana Bread, Biscuits and Gravy, Breakfast Burritos, and various types of muffins. 

Lunches: Leftovers, PB&J, Meat and Cheese Wraps, Cheese Quesadillas, and Mac 'n' Cheese. 

Dinners, however, are always planned for since they tend to take the most ingredients and prep time. Here's what's on our menu this week:

Sunday: Salad Bar - It's been forever since we've had a huge salad bar and it sounded so good! I've got lots of different fixings and I'm even making homemade croutons. I'll probably make some yummy bread to go along with this. Wouldn't want to keep things too healthy ;)

Monday: Brown Sugar Ham Grilled Cheese - These have become a new favorite in this house. Each time I ask for menu suggestions these are one of the first meals out of Jamison's mouth. I can't make them every week but I definitely try and get them on the menu at least once each month. 

Tuesday: Taquitos - I haven't decided what type of taquito to make yet. I've got the ingredients for the slow cooker creamy chicken taquitos as well as refried bean and cheese taquitos. We also froze a lot of the pork carnitas we made last weekend and that would make excellent filling as well. So many choices! I guess I'll decide on Monday so I can get what I need thawed. 

Wednesday: Honey Mustard Chicken and Rice - Shredded chicken mixed with mayo, spicy brown mustard, honey, and cream of chicken soup then served over brown rice. It's creamy and delicious! It also cooks in a slow cooker which is always a bonus.

Saturday: Mongolian Beef Ramen - This will be a new recipe for us but Micah and I are big fans of P.F. Chang's Mongolian Beef so I imagine this will be a hit. Maybe I should start posting recipe reviews so I can let you all know if it's worth trying/too much work/a huge winner/etc. What do you think?

This week I tried to make meals mostly out of items we already had on hand as well as getting some input from the kids. It looks like a yummy week!

Sunday: Burgers - I'm going to make some pretzel buns to go with these tonight as well as some waffle fries. Anyone else think waffle fries seem so much tastier than regular cuts of fries? Micah thinks I'm crazy but I think all the extra ridges make them significantly better. 

Monday: Thai Chicken PizzaIt's been a few weeks so this favorite is back on the menu! I'm excited to make these in my new 15 inch cast iron pans to get that crispy but chewy crust. 

Tuesday: Brown Sugar Ham Grilled CheeseThe kids can't seem to get enough of these which is fine by me because they are so easy! I can make the sauce hours or even days in advance and then throw the sandwiches together quite easily at dinner time. I like serving these with a side of fresh veggies like carrot sticks and pepper strips for an even easier meal. 

Wednesday: Baked French ToastI don't like regular cream cheese on it's own but bake it into a cheesecake or stuff it in sweetened bread covered with syrup and I'm all over it. The tang of the cream cheese cuts the richness of the rest of the dish perfectly. I'd love to throw in raspberries or blueberries but certain family members might revolt.

Saturday: Sweet & Sour Chicken and Fried RiceIt's been ages since we've made this at home... so like probably a month or two!

Sunday: Slow Cooker Beef Stroganoff - I'm really looking forward to fall foods! Last week with chili just set me in motion and I can't wait to eat all the comfort foods. 

Monday: Pizza Muffins - These are a fun food for the kids. All the pizza toppings are mixed into a basic savory muffin batter and you can dip them in warmed pizza sauce or marinara. 

Tuesday: Grilled Cheese & Tomato Rice Soup - Another comfort meal! I totally cheat and use canned tomato soup and simply cook the rice along with it. I've tried doing tomato soup from scratch but it wasn't a huge hit in this house. Do you have a recipe that's a winner?

Wednesday: Taco Pancakes - I was struggling to come up with another meal for the week so I paged through my old menus and these jumped out at me. I haven't made them in quite a while so I knew they needed to make a reappearance. Cornbread pancakes loaded with taco meat, beans, corn, and cheese then topped with sour cream, avocado, and salsa. Yum!

Saturday: Chicken Parmesan Sliders - I've had these on my mind for ages but I keep forgetting to put them on the menu. I'm going to use our homemade pizza sauce instead of pasta sauce but otherwise I am probably sticking to this recipe. Unless I make homemade chicken tenders. Haven't decided on that one yet!
