The kids and Micah had Wednesday-Friday off from work and we really soaked up the vacation time. We rarely changed out of pjs, did a lot of snacking, and played lots of games. Micah's parents arrived Wednesday night and stayed until mid morning on Saturday. We ate sooo much food for Thanksgiving. We did a small amount of Christmas shopping on Black Friday and plan on doing a bit more online for Cyber Monday. (Have you checked out the sales and deals page?)Read More
Inspired by one of my favorite blogs I thought it would be a great idea to look back each week at those things that brought me the most joy. This is far too fitting for my blog to ignore the idea so I look forward to posting these each week!
I don't know about you but last week was not a very pleasant week! There was so much negativity swirling around and being flung at everyone that it was easy to get caught up in all of it. I'm so thankful that I've been diligent about focusing on seeing goodness and choosing to be happy in spite of things going on around me. Choosing to be grateful for what is right in front of us is the easiest way to create an atmosphere of joy and happiness so if you aren't already focusing on these I really want to encourage you to switch your mindset to gratitude and see how it can change your whole outlook!Read More
I love menu planning and seeing other's dinner plans! I'm weird like that ;) As I've shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author's original recipe unless it's my own recipe/creation that I don't have a link for... yet.
Sunday: Chili - It may not officially be fall or even fall weather but after we went apple picking yesterday I've got fall on the brain! Plus it's Micah's birthday weekend and this is one of his favorite meals. I made chili beans from scratch to use which makes it extra yummy!
Monday: Sushi - It's Micah's birthday! We already placed our sushi platter order and changed it up a little since we just ordered last week for my birthday. But the kids ate WAY more than we anticipated so we made sure to get plenty that they can eat. I think Anders ate 7 pieces!
Tuesday: Mexican Pasta - I'm taking some of the leftover chili and adding in black beans and corn plus some other spices. It gets served over garden rotini pasta with cheese, sour cream, and avocado on top. This was a staple in Parker's early years but we haven't made it recently. It's delicious!
Wednesday: Potato Cheese Soup - I told you, fall on the brain! I've got some ham in the freezer along with ham drippings from the last time we cooked one so I'm going to dice it up and toss it in the soup. It adds a wonderful smokey flavor.
Friday: Homemade Pizza and Movie Night - you can find my pizza crust recipe here.
Saturday: Cheesesteak Egg Rolls - Okay, this can seem like an overwhelming recipe because there are SO many ingredients and steps but the flavor is worth it! Of course we change things a little when we make it. We don't use real red wine but simple cooking wine and we also use whatever roast we have on hand because brisket is SPENDY. But even with these cost saving measures it's still a phenomenal meal. Micah has been requesting these for about a year since we made them last so I knew I had to fit them in again when it worked for our schedule.
What's on your menu this week? Are you ready for fall foods or are you clinging on to summer dishes? Tell me in the comments!
