Weekly Menu Plan #38

I love menu planning and seeing other's dinner plans! I'm weird like that ;) As I've shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author's original recipe unless it's my own recipe/creation that I don't have a link for... yet.

Sunday: Burgers - Nothing fancy, just classic cheeseburgers with fries and carrot sticks for a side. I'm all about easy-peasy on a Sunday. 

Monday: Chicken Alfredo BundlesWe've tried a different version of these made with cream of chicken soup and cheddar cheese so I think the Alfredo version will be tasty as well. A side of steamed broccoli will be a perfect accompaniment. 

Tuesday: One Pot Pizza Pasta - We are big pizza fans around here and making it into a pasta dish that only gets one pot dirty? Amazing! I can't wait to eat this. 

Wednesday: Sloppy Joes - I love freezer meals! The last time I made sloppy joes I made extra so I could throw some in the freezer for future use. All I need to do for dinner is put it in the crock pot with a little extra water and it will be ready just when we need it. Hallelujah!

Friday: Homemade Pizza and Movie Night - you can find my pizza crust recipe here.

Saturday: Shepherd's Pie Is there a meal that screams comfort food more than shepherd's pie? A delicious stew topped with creamy mashed potatoes and then baked is begging to be eaten! We usually make ours with ground beef because it's what we have on hand.

This week I tried to make meals mostly out of items we already had on hand as well as getting some input from the kids. It looks like a yummy week!

Sunday: Burgers - I'm going to make some pretzel buns to go with these tonight as well as some waffle fries. Anyone else think waffle fries seem so much tastier than regular cuts of fries? Micah thinks I'm crazy but I think all the extra ridges make them significantly better. 

Monday: Thai Chicken PizzaIt's been a few weeks so this favorite is back on the menu! I'm excited to make these in my new 15 inch cast iron pans to get that crispy but chewy crust. 

Tuesday: Brown Sugar Ham Grilled CheeseThe kids can't seem to get enough of these which is fine by me because they are so easy! I can make the sauce hours or even days in advance and then throw the sandwiches together quite easily at dinner time. I like serving these with a side of fresh veggies like carrot sticks and pepper strips for an even easier meal. 

Wednesday: Baked French ToastI don't like regular cream cheese on it's own but bake it into a cheesecake or stuff it in sweetened bread covered with syrup and I'm all over it. The tang of the cream cheese cuts the richness of the rest of the dish perfectly. I'd love to throw in raspberries or blueberries but certain family members might revolt.

Saturday: Sweet & Sour Chicken and Fried RiceIt's been ages since we've made this at home... so like probably a month or two!

Sunday: Cheeseburgers - The grilling season is drawing to a close plus it's supposed to be in the high 80's here today so I definitely didn't want to heat up the house! I'm going to make some pretzel buns to eat our burgers on this week. Yum!

Monday: Sushi! It's my BIRTHDAY!! Wooo! I put in my order for a giant platter and Micah is going to leave work early to pick it up. I've also got some stir-fry left over from last week for the kids that are still iffy on sushi. I know the big boys plus Micah and I will get our fill though. And for dessert? I'm coming up with a sprinkle explosion! I'll be sure to take pictures... as long as it's as amazing as I think it will be. 

Tuesday: Eggs Benedict Casserole - Eggs were less than $0.50/dozen last week so we stocked up the best we could. I wanted to get more but I only have so much room in the fridge! But we do have lots of eggs to use and this is a huge hit with the whole family. 

Wednesday: Tater Tot Taco Bake - This casserole will use up LOTS of the items I made during the food prep weeks which is good! No use making all that food if it doesn't get used. Plus I need to make a few other items and most of my containers are used up!

Saturday: Creamy Chicken Taquitos - Micah's parents are going to be in town for his birthday weekend so I wanted something super simple for dinner. We don't want to spend all sorts of time in the kitchen if we can help it.

Weekly Menu Plan #23

Sunday: Pulled Pork sandwiches - It's a cook out with extended family. A good portion of my side of the family hasn't seen us in about a year! That means the last time they saw the little guys they were barely crawling let alone running around the yard. We are going picnic crazy with pasta salad, potato salad, fruit, and cupcakes. Yum!

Monday: Honey Chipotle Chicken Crispers (Chili's Copycat Recipe) - We used the recipe for these chicken crispers a few weeks ago when we made Sticky Fingers Wraps. The breading is light and crispy while the chicken stays incredibly juicy. 

Tuesday: Burgers - I'm thinking of doing some gourmet style burgers topped with grilled pineapple or fried eggs. 

Wednesday: Pizza Quesadillas - We like to call these "Pizzadillas." These are a huge hit with the kids and they are perfect for letting them help in the kitchen. Sprinkle on a light layer of cheese on the tortilla, add your toppings, another sprinkle of cheese, and a second tortilla. Grill each side until toasted and the cheese is gooey. Serve it with a side of warm pizza sauce!

Saturday: Cuban Sandwiches - Micah discovered he LOVES Cubans a year or so ago and it's almost always what he orders when we go out. I realized that we have amazing pulled pork left from the Father's Day meal at our church so we are going to make our own Cubans at home!
