The kids and Micah had Wednesday-Friday off from work and we really soaked up the vacation time. We rarely changed out of pjs, did a lot of snacking, and played lots of games. Micah's parents arrived Wednesday night and stayed until mid morning on Saturday. We ate sooo much food for Thanksgiving. We did a small amount of Christmas shopping on Black Friday and plan on doing a bit more online for Cyber Monday. (Have you checked out the sales and deals page?)

I love menu planning and seeing other's dinner plans! I'm weird like that ;) As I've shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author's original recipe unless it's my own recipe/creation that I don't have a link for... yet.

If you need some inspiration for how to create menu plans you can read here where I go into detail about how I make a plan for our food week and here to read how I create our grocery list.

I don't make specific plans for breakfast and lunch but these are the basics I rotate between while throwing in a few other things for special days or weeks when I have the right ingredients.

Breakfasts: Pancakes, Coffee Cake, Egg Sandwiches, Sausage Balls, Eggs (various ways), English Muffins, Banana Bread, Biscuits and Gravy, and various types of muffins.

Lunches: Leftovers, PB&J, Meat and Cheese Wraps, Cheese Quesadillas, and Mac 'n' Cheese.

Dinners, however, are always planned for since they tend to take the most ingredients and prep time. Here's what's on our menu this week:

Sunday: Waffles of Insane GreatnessI'm going for super easy, no brainer meals this week because of the holiday. I know these will get eaten and there will probably be leftovers for an easy breakfast. 

Monday: Nacho Grilled Cheese SandwichesUm, holy cow! These sound absolutely incredible! Load up your bread with all sorts of nacho fixins and turn it into a grilled cheese? Genius, just genius. 

Tuesday: Lo MeinI wanted to stay away from anything relating to Thanksgiving food flavors so we are going with Asian flavors! This will be a great way to use up any produce we have that won't be used for Thanksgiving. 

Wednesday: Leftovers - We need to clean out the fridge before we make more leftovers tomorrow! 

Thursday: Happy Thanksgiving! I'm so thankful for each and every one of you that supports me and this blog! I pray that you enjoy your time today whether you are with family, friends, or strangers. 

Friday: Homemade Pizza and Movie Night - you can find my pizza crust recipe here.

Saturday: Thanksgiving Leftovers - I'm pretty sure that this is the plan for most people for several days following the holiday. Is it your favorite part?

How many of us are filled with good intentions when it comes to the holiday season but either plan too much, forget what it was we really wanted to do, or wish we would have done just a little bit more? I've been all three of those people! 

There have been years where my to-do list for the holidays is a mile long and I stressed myself out trying to bake thirteen different types of cookies, attend six parties in a matter of a week, and make or buy gifts for everyone under the sun. Then there are years where I knew there was some really awesome thing I saw online the year before only to have no clue what it was by the time the season rolls around again. And then the years where the season flies by and I barely did anything but decorate the tree!
