A peek at our weekly grocery shopping
Each week I plan on sharing a picture of our cart at each store along with a breakdown on what we bought and what we paid. Thankfully we have zero dietary restrictions or allergies which helps us keep our budget on the low side. We try to stick between $80-90 each week for our family of seven. A lot of times what is on the menu doesn't directly correlate to what we buy because I like to plan our meals from what we have on hand currently and use our budget to stock up on good buys plus produce and dairy products.
I really thought I was going to be closer to the high end of our budget this week because of a few bulk items. Thankfully I overbudgeted for some items and we came in under budget. Woohoo! I even splurged on whipping cream for my Mother's Day waffles. I'll be making fresh strawberry syrup to go with them and I'm already drooling.

I love menu planning and seeing other's dinner plans! I'm weird like that ;) As I've shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author's original recipe unless it's my own recipe/creation that I don't have a link for... yet.

I don't make specific plans for breakfast and lunch but these are the basics I rotate between while throwing in a few other things for special days or weeks when I have the right ingredients.
Lunches: Leftovers, PB&J, Meat and Cheese Wraps, Cheese Quesadillas, and Mac 'n' Cheese.
Dinners, however, are always planned for since they tend to take the most ingredients and prep time.
Here's what's on our menu this week:
Sunday: Happy Mother's Day! Lunch is my (new) traditional sushi platter and dinner will be super easy - sandwiches! I wanted a no fuss meal that we can simply enjoy.
Monday: Taco Pancakes - I love when I have all the ingredients for a meal on hand already! Black beans and corn in the freezer, corn bread ingredients in the pantry and fridge, and sour cream and salsa in the fridge. Perfect!
Tuesday: Chicken Bacon Ranch Taquitos - Also known as "cracked out" chicken because of the combo of cheese, ranch, and bacon. I'm following the recipe I linked but instead of putting the chicken mixture on buns I'm rolling it up in small tortillas and baking until crispy.
Wednesday: Bacon Cheeseburger Tater Tot Casserole - That's so many words for a meal! But it's simple and delicious. I'm actually going to make the cheddar soup from scratch this time using this recipe. Yay for homemade!
Friday: Homemade Pizza and Movie Night - you can find my pizza crust recipe here.
Saturday: Chicken Crispers - The weather is warming up so I like having a few meals that don't require the oven. We use our deep fryer for these which doesn't make the whole house hot like the oven does. So much nicer! I'm thinking a side salad or lots of fresh veggies will make this a great summer meal.
